How To Cook Chicken Breast In A Pan

breading: i put these new Parmesan & Garlic Cheez-Its and some special k in a food processor, and a little bit of brown sugar, and once it was basically a powder i put it on a plate and added flour, and crushed up some of those french's french fried onions in the can you use on thanks giving.
how to do it: cut a few chicken breast
s into strips, and put them in a bowl. cover / rub with brown sugar. leave this bowl here while you do everything else, eventually the chicken
juice (i dunno what to call it), will soak it up and there will be sort of a brown sugar syrup in the bowl when you get back to it
while this is happening crack a few eggs into a bowl, scramble them, turn on the stove, for a frying pan
coated with butter. i set my shit up like this, from left to right. a) stove, b) 2 plates, one with the breading, one with paper towels for when the chicken is done, c) the bowl of eggs, d) the bowl of raw chicken and brown sugar. this way you can get sort of a train going to your frying pan
other than that its pretty simple. dip the brown sugar'd chicken in the egg, roll it in the breading (i tend to put it in the center and sort of scoop the breading from the side over it, like i'm burying something in a sandbox) toss it in the pan
. i kept the pan
on medium heat so the chicken would cook
with out burning the chicken fingers (after the 2 dark brown ones in the picture, it was set to high before that)
flip em over when they seem ready. if you shake the pan
a little and slide them around you can usually hear when theyre ready (they sound kind of hard)
the end product is pretty sweet, if youre not into that, dont use the brown sugar. also most of these are cut up, because last time i had to throw out too many half cook

I truly dislike all the dishes and pots necessary for chicken parmesan plus I don't like to fry it.
I dredged the chicken breast
(thin cut or tenders) in flour and browned them in olive oil and butter.( equal measurements) Remove chicken from pan and begin the sauteeing of onions in the same pan.
I sauteed onions in the pan, added crushed tomatoes and flavorings that we enjoy; salt, pepper, Italian seasoning, garlic, some red pepper flakes and if you have fresh basil ...add it too. I toasted bread crumbs (Panko) with some olive oil in a pan and added salt for taste. When the onions were soft, the tomato sauce was poured on. I put the chicken in the sauce. You can figure out how much time is necessary to cook this if you think it isn't done on a low fire. Keep it simmering
I added mozzarella and parmesan cheese all over the top. I covered it and let it melt and added the toasted bread crumbs on top. More cheese was added because my boys love cheese (so do I!!!) I made pasta to go with it.
